1. Muddle kiwi with brown sugar simple syrup in a mixing tin.
2. Add Vanilla-Infused EG Vodka, pineapple juice and egg white.
3. Dry shake to emulsify the egg white, then add ice and re-shake.
4. Double strain into coupe glass.
5. To garnish, drop 8 drops of bitters around the rim of the glass, then draw a line through the drops with a toothpick.
